Abstract

Fish ball tofu is a snack made with tofu and fish batter as a filling. The meatball molding by hand requires more energy and time and poses a risk to the quality of the fish ball tofu product. This research aims to make a batter-filling tool of fish ball tofu that is easy to use and safe for batter products. The fish ball tofu batter-filling tool is designed by considering the driving force, size, ease of operation, maintenance, and safety of the materials used. The tool was tested using performance rate measurement, sensory testing, and ANOVA test analysis from sensory testing. The components of the tool consist of a press frame, a dough tube, and a dough-filling funnel made of stainless steel. The device measures 30 cm long, 20 cm wide, and 40 cm high. The tool's performance rate test results are 81.8%, which is a better value than without the tool. Sensory test parameters of aroma, taste, and texture have the same score. The difference in the sensory test is seen in the appearance parameter, where the meatball tofu that is molded with a tool has a higher score than using a hand. The results of the ANOVA test analysis showed that there was no significant difference in the sensory characteristics of tofu fish balls that were molded manually or using tools.
